Introducing RedbankCo's Pop Up Incubator


Manchester as a city, is a hub of eclectic, innovative and exciting ventures; so when I heard about the latest foodie concept sure to take the city by storm, my interest was well and truly piqued.

We met in the Green Quarter on a Friday eve, just a stones throw away from the buzz and bluster of the NQ. Strangers at first, with nothing in common but our love for food; we were a gaggle of Manchester’s writers, creators and general enthusiasts, gathered around a shared table, making friends with our neighbours and offering introductions ahead of the anticipated announcement to which we were all privy to hear.

Pete of Redbank Co, the main man and brains behind the operation stood to share his vision. A simple concept, but one sure to appease the masses; local location, good gin and phenomenal food - all sourced from the finest talent our fine fair city has to offer.

Designed exclusively to showcase up-and- coming food professionals, Redbank Co offers a home to independent vendors, who are passionate about feeding their creations to the mouths of hungry ‘cunians to catch their sought-after approval.

Not only will Redbank Co support the rising talent of the city, but will provide a platform for notable names such as Holy Crab UK, Blue Caribou and MIMOD to host regular supper clubs; an intimate, exclusive, most-likely candle-lit dining experience and winter’s cosy alternative to losing your toe- feels at outdoor food fairs. With Three Rivers Gin distillery quite literally on the doorstep of Redbank Co and a handful of breweries a pint-sized walk away, we were treated to free-flowing tumblers of the very best locally crafted tipples alongside never-ending trays of savoury Crab Balls, piping-hot and stuffed sumptuously with soft crab meat courtesy of Holy Crab UK.

Pete’s passion for the cause is infectious, and prompted excitement in all of us, keen to be a part of a new exciting development, a true recipe for success.
